step-by-step guide to disabling grayscale mode automatically

In recent times, a trend has emerged in Thailand where many websites are appearing in grayscale. This is achieved through the use of -webkit-filter: grayscale(100%), filter: grayscale(100%) and similar filters.

Although it is possible to revert these websites back to colored versions manually by accessing Chrome's developer tools and unchecking grayscale filter checkboxes under Elements > Styles, this process becomes tedious if one has to repeat it for every webpage visited.

Various extensions like CustomBlocker, stylish, stylebot, have been attempted without success as they can css-select but struggle to accurately edit/inject/remove grayscale filters.

After spending nearly 4 hours trying different methods found on Google with limited results, assistance is being sought:

Is there a way to automatically disable grayscale filters on any website employing them?

Even if you've attempted this before, one way to tackle the issue is by creating a personalized CSS stylesheet for Chrome using a plugin such as Stylish (there might not be an integrated feature in Chrome for this).

You can then overwrite the filter in your custom styling sheet.

However, it's worth noting that for the website mentioned above, the entire site is being desaturated through JavaScript. In such cases, the only solution may be to disable JavaScript in your browser, which will restore the color to everything on the page.
