I haven't personally had the chance to try it out (it comes with a price tag of €30) but I found a module that seems to fit your requirements, you can check it out here.

Alternatively, if you enjoy tinkering yourself, there is a helpful Magento wiki that covers all the basics for creating a vertical menu. By incorporating some JavaScript, you should be able to implement collapsing submenus without too much difficulty.
